Each year, my husband takes off the first two days of the NCAA Basketball Tournament. He stays at home, sets up a handful of TV’s in our living room, and invites his friends over to watch EVERY SINGLE GAME.
To satisfy the boys’ burly, game-watching appetites, I turned to the March Madness menu in my new Bluegrass Gatherings cookbook. I decided to make Tip Off Poppers. They were super easy to make AND they were a hit! (My husband’s friend said they are his new favorite food, seriously!)
Try them yourself:
20 jalapeños, sliced in the middle. Use a spoon to scrape the seeds out.
10 oz softened cream cheese
1/2 BBQ sauce
1 lb cooked, crumbled bacon
Preheat the oven to 350. Grease a baking sheet. Top the jalapeños with cream cheese. Heat in the oven for 16 minutes. Take out of the oven and equally distribute the BBQ sauce and bacon. Put back in the oven for 7 minutes. Serve warm or at room temperature. Enjoy!
I also made the Buffalo and Blue Cheese Meatballs, also from the March Madness menu. I mixed the ingredients and rolled the mixture into “balls” and gave my husband heating directions before heading to work on Thursday. That afternoon my husband called, telling me how good the meatballs were. The key word here is were. By the time I got home, the meatballs were a thing of the past. Luckily, I got a “before” picture.
