Healthy Super Bowl Side [Recipe]

Here’s a great way to have a healthy alternative to all the bar food you would normally serve when having people over for the Super Bowl!  A great salad with plenty of crunch and flavor!  The Touchdown Crunch Slaw is from our newest cookbook, Bluegrass Gatherings.  Find this and other great menu items for your next football party featured in our Fall Season – Tailgating menu.

Touchdown Crunch Slaw 

Ingredients    

1/2 cup buttermilk

2 tablespoons mayonnaise

2 tablespoons sour cream

2 tablespoons cider vinegar

2 tablespoons minced shallots

1 tablespoon sugar

1/2 teaspoon salt

1/4 teaspoon pepper

3 tablespoons chopped chives

1 pound napa cabbage, shredded

6  radishes, chopped

2  ribs celery, thinly sliced diagonally

2  Granny Smith apples, chopped

1/2 cup crumbled bleu cheese

Directions

Whisk together buttermilk, mayonnaise, sour cream, vinegar, shallot, sugar, salt and pepper in a large bowl until sugar has dissolved, then whisk in chives.  Toss cabbage, radishes, apples, and celery with dressing. Sprinkle with crumbled blue cheese.
